Grayton Beach State Park protects about a mile of quiet, dune-backed Gulf beach in South Walton, next to Western Lake, one of the area's rare coastal dune lakes. Surf anglers come for pompano, Gulf whiting and redfish in the troughs, with Spanish mackerel and bluefish along the bars in spring and fall. When Western Lake breaks through to the Gulf, its outfall draws redfish, speckled trout and ladyfish. Fish a moving tide with sand fleas or shrimp on double-drop rigs, and spoons when bait shows. The park is open 8 a.m. to sundown with a small entrance fee, and in busy periods it can fill and close to day visitors for hours. Walton County bans shark fishing, chumming and bloodbaiting from its beaches. Watch for rip currents, stingrays, summer lightning and hot, exposed sand.
